What is clarified butter?

Butter that has been cooked in a slow heating process where the water, milk proteins, sugars and impurities are extracted leaving a pure form of healthy fat.

What is the fat content of YoGHEE?

YoGHEE is 99.8% pure butterfat

Why doesn't YoGHEE require refrigeration?

By removing the milk proteins, sugars and water that favor the growth of organisms promoting rancidity, butterfat does not become rancid like butter and can be stored un-refrigerated. It has been said to have a shelf life of one year or longer. Ayurveda states that aged ghee actually increases in healing qualities.

Do I use the same amount as I would any other oil?

Due to its rich, buttery taste you will find that using less YoGHEE than any other cooking oils, works well.

Why is unsalted butter used to make YoGHEE?

Unsalted (sweet) butter has a more delicate flavour and is typically fresher than salted butter. Without salt to aid preservation, the manufacturer must use fresher cream and the difference is better-tasting butter.

If I am lactose-intolerant can I eat YoGHEE?

Yes. Though you are best checking with your doctor, many lactose-intolerant people find no difficulty digesting YoGHEE. It is lactose free and oxidized cholesterol is similar to many nut or vegetable oils in this respect.

What about bad fats?

Most fats found in today's typical diet have become "de-natured" or changed by the processes of refining and hydrogenating. These processes are done to improve taste, but change their natural chemical structures. Over time, ingested oils and fats are rendered toxic. Additionally, the hormones, unnatural feed and poor living conditions we subject animals to cause serious problems. These practices as well as pollution and smoking, change healthy and even essential fats into substances that can damage cells and contribute to heart disease and cancer. Fats in their natural form are to be feared less than what has been done to them.

What about trans fats?

Trans fats or Trans fatty acid is the short form for transformed fatty acid. All hydrogenated oils are trans fats. The body needs fats to function properly but can become sick from the ingestion of hydrogenated oils and trans fatty acids. Trans fatty acids are found in margarine, shortenings, commercial baked goods, processed and fried foods.

Does YoGHEE contain trans fats?

YoGHEE has an ideal, balanced ratio of essential fatty acids and does not contain trans-fatty acids.

Are saturated fats good for me?

Even saturated fats play an important role in our overall health, as they can enhance the immune system, protect the liver, have anti-microbial properties, and protect the calcium depositing mechanism in bones from free radical disruption. High quality saturated fats in their natural form (unhydrogenated) can help satisfy hunger, raise metabolism, and even increase weight loss.

What about cholesterol in our diets?

Cholesterol itself is not harmful but becomes harmful when it is partly broken down or oxidized by unstable chemicals called free radicals. YoGHEE has no oxidized cholesterol or trans-fatty acid and is very stable at higher cooking temperatures.

What benefit is a 'high smoke point' when cooking?

There is a smoking point for every type of oil. Shortly before the smoking point, the oil starts to decompose and the formation of free radicals and metabolites takes place. These substances are highly toxic and have been linked directly with cancer. Further, this oil is cannot be properly digested by the liver and lead to liver problems and a reduction of digestive ability if consumed regularly.

Some oils should never be heated at all, like oils containing polyunsaturated fatty acids. This also includes most cold-pressed, unrefined oils, safflower oil, nut oils, wheat germ oil, and linseed oil. Olive oil contains mainly mono-unsaturated fatty acids and it performs better if used at a lower heat.

As a pure fat with a smoking point around 190 C (375 F), YoGHEE is one of the only fats that can be recommended without restrictions for baking, roasting, sautéing and frying.

Is true that the energy of prayer enhances your food?

This is probably the most important aspect according to Ayurveda: your state of consciousness when you eat and when you prepare your food. An example of this is when a person is preparing a meal and has positive emotions. The chef will infuse that preparation with that emotion. Be it love, joy passion. The reverse is also true.

This is important to remember in eating - at home or away - that the consciousness of the cook is in the food. And the consciousness of the food one is eating is in there as well. So in Ayurveda, food preparation is considered a sacred act. This is one of the main reasons why animal food is generally not recommended because of the extreme pain, agony, suffering, fear, anger and terror the animal experiences has gone into the food. Add the highly toxic chemical contamination of modern factory farming like hormones, steroids, antibiotics, pesticides, etc., and you have a prescription for death not life.
