Buttermilk Pancakes

Serves 3-4

Ingredients

  • 2 large eggs
  • 1/4 cup honey YoGHEE
  • 1 cup buttermilk
  • 1/2 cup whole wheat flour
  • 1/2 cup spelt flour
  • 1/2 cup Rogers 9 grain cereal
  • 1 tbsp baking powder
  • 1 tsp salt

Method

Beat the eggs and honey YoGHEE, add buttermilk. Add all dry ingredients in a separate bowl. Add to egg mixture and stir with fork until blended. Batter will be lumpy. Pour 1/4 cup batter at a time on griddle or frying pan. Bake until bubbles form and edges start to dry. Turn and bake other side.
