Lavender Mushroom Pasta

Serves 2-3

This delightful dish will fill your kitchen with a blend of amazing aromas.

Ingredients

  • 1/4 cup YoGHEE
  • 1/2 tsp lavender buds
  • 1-2 cloves fresh garlic
  • 1 small red onion chopped
  • 1 pinch crushed red pepper flakes
  • 1 pinch sea salt
  • 2 1/2 cups chopped fresh mushrooms
  • 1/2 cup white wine
  • 1/2 cup pine nuts
  • 2 tbsp sweet white miso
  • 1 tbsp grated zest of lemon
  • 2-3 sprigs fresh parsley

Method

Saute garlic and onions in lavender YoGHEE. Add pepper flakes and salt and saute for 2-3 minutes. Stir-in mushrooms and white wine and cook covered on a low heat until tender, 15-20 minutes. Stir-in pine nuts, miso and lemon zest. Boil your pasta of choice (suggest linguini). Spoon mushrooms over cooked pasta and garnish with parsley.
